A well-rounded meal but make it quick and easy. Lentil fries are a great option for when you are feeling the PMS exhaustion set in and you just need something quick and delicious to satisfy your hunger and savory cravings. Developed and tested by a registered diet tech, these fries are not your average snack. Packed with nutrients that will help support your body while it’s shedding the inner lining, sweet potato fries, spinach, lentils and cheese come together for a highly satiating meal.
Ingredients
- 2-16oz bags pre-cut sweet potatoes fries, or cut your own
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 6 oz of frozen spinach, thawed
- 3/6 14oz can of lentils, rinsed
- 1 cup of shredded white cheddar cheese
- Frank’s Red Hot sauce for serving
Method
Preheat oven to 400°F, lay out two baking trays and line with parchment paper. Toss sweet potatoes in a bowl with olive oil, garlic powder, paprika, salt and pepper until the potatoes are evenly coated. Spread the fries onto the two baking sheets, making sure they’re evenly spaced. Bake for 30 minutes, flipping halfway through.
Once the 30 minutes is up, pull the fries out and add the remaining ingredients, spinach, lentils and cheese. Bake for another 5-7 minutes, or until cheese is completely melted.
Serve with Frank’s Red Hot sauce and enjoy.
